Best comforting vegan breakfast recipes

Hi guys!

It’s about time to bring up the breakfast topic here, as it’s my favorite meal ever. Really, I could even have breakfast for dinner – what, oatmeal is delicious every time of the day -. As I was saying, I religiously have breakfast every day of the week, and especially on week-ends. You must agree with me that breakfasts on week-end mornings are the more relaxing and enjoyable ones.

For when I have more time in the morning, I came up with two of my favorite (sweet) recipes. Both are very filling, vegan, plus they taste amazing! In case, note that you can make them if you’re not a vegan. 😉 I’ll also post salty recipes as, regarding of taste, I also love a salty spanish breakfast, or better, a good old brunch.

Vegan chocolate chip pancakes

Ingredients: (for 8 portions)

  • 3 cups of all-purpose flour
  • 1/2 cup of almond milk
  • 1 tbsp of baking powder
  • 1 ripe mashed banana
  • 2 eggs (*avoid that for vegan version)
  • 20g of vegan dark chocolate chips

Toppings:

  • Raspberries
  • Pomegranate
  • Mapple Syrup

 

 

 

 

 

 

Note: You can use non-dairy whipped cream and any fruit you have at home for topping as well.

  1. In a large bowl, add the almond milk to the banana to help mashing it with a fork. Once you get a liquid consistence, incorportate the eggs* and blend.
  2. Then add all the dry ingredients (flour, baking powder) except the chocolate chips.
  3. Heat up a pancake pan to high to medium heat
  4. After adding the mixture to the pan, pour inmediatly some chocolate chips on it.
  5. Cook for 2mins on each side.
  6. Jazz up your pancakes with some mapple syrup and fresh fruit on top. Enjoy while they’re still warm.

 

Fast & Easy Oatmeal

Ingredients:

  • 1 cup of instant oats
  • 1/2 cup of almond milk
  • 1 teaspoon of chia seeds
  • 1 teaspoon of cinnamon
  • 1 tbsp of honney* (agave syrup for vegan version)

Toppings:

  • 1/2 banana, sliced
  • A handful of raspberries
  • A handful of blackberries
  • A dash of cinnamon

 

 

In a saucepan:

  1. Cook the oats with the cinnamon, chia seeds and almond milk at medium-heat until they’re soft – about 4 minutes.
  2. Add the honney or syrup and give it a quick stir.
  3. Serve and add the toppings of your choice.

Tip: Frozen fruit works well too.

In the microwave:

  1. Mix all the ingredients in a micorwavable bowl and bake it for 3 minutes.
  2. Add the toppings of your choice.
