Easy & Delicious Vegan Appetizers for Summer

What’s up guys?

Today I’m showing you three delicious & super simple appetizer ideas for summer! They are perfect for an outdoor apéritif  on a sunny day. I’ve been loving pretzels these days and I like to spice them up with some toppings to make them extra-tasty. Also, the buschetta recipe is inspired by an Italian friend of mine who makes this effortless snack so good! I find it goes very well with hummus so I brought my personal touch to it.

By the way, I’ve been working on my final exams recently, hopefully I can focus again on posting more content as I’ve been enjoying posting healthy food articles lately! It’s the last stretch line before I finish my degree for goods and all. This means the end of my exchange year in Madrid is around the corner, and it truly breaks my heart. However, it’s the end of a story and the beginning of a new one…

Here we go with the recipes:

Tasty Soft Pretzels

I enjoy upgrading regular preztels by adding fresh veggies as toppings.

♡ You will need:

  • 2 large soft pretzels 
  • Strips of 1 carrot
  • Half a roasted bell pepper
  • Cucumber dices
  • Olive rings
  • Half an avocado, sliced
  • 2 tbsp of regular Hummus 
  • Chia seeds
  • Flax seeds (or linseeds)

Spread half the pretzels with hummus so that the vegetable slices hold. Then arrange the vegetable slices and sprinkle with seeds.

The pretzels can be cut into pieces and dipped in hummus, barbecue sauce or any sauce you like.

Mediterranean Hummus Bruschetta

♡ You will need:

  • 2 slices of whole wheat bread
  • 2 tbsp of hummus
  • 2 fresh organic tomatoes
  • Half an onion
  • Fresh parsley
  • 2 teaspoon Extra Vigin Olive Oil
  • Salt & Pepper

While the bread is toasting, cut the tomatoes in dices as fine as possible, as well as the onion. Combine the tomatoes, onions, parsley and olive oil into a bowl.

Then, cut the toasts in small portions, spread the hummus and put the tomato mixture on top. Season with salt, pepper, and a drizzle of Olive oil.

Tip. To spice up this recipe, you can rub a garlic clove to add flavor to the bread before spreading the hummus.

Pesto & Avocado Grilled Cheese

♡ You will need:

  • 2 slices of whole wheat toasts
  • 2 tbsp of organic pesto sauce (you can try vegan pesto sauce as well)
  • 2 slices of vegan cheddar style cheese
  • 1 avocado, sliced

To make the sandwich: spread the pesto on each of the bread slices, put the cheese on top and add the avocado slices.

Heat up a pan and let the bread toast & the cheese to melt.

Cut the sandwich in triangles and enjoy!
