Veggie Chili «con carne» 🔥

Hi guys! I’m so excited to share this Veggie «con carne» with you because its such and easy and refreshing recipe, you literally can make this in less than 10 mins. We cooked this recipe last weekend with my boyfriend, it was such a nice quick lunch we both enjoyed so much!

My boyfriend and I are really enjoying cooking plant-based together, by the way next recipe will also be one of our creations! So stay tuned 😘

Ingredients

For 2 👫

  • 1 can of black beans
  • Washed and slices mushrooms
  • 1 can of sweet corn
  • 2 cups of rice
  • 1 cup salsa
  • 1 medium onion (diced)
  • 5 small microwavable potatoes
  • 2 large ripe avocados
  • 1 garlic clove
  • 1/2 lime
  • Spices of your choice: salt, pepper, smoked paprika, parsley, olive oil

Directions

  1. Cook your rice as per package directions
  2. Rince your black beans, sweet corn and set aside
  3. Finley dice your onion, put it in a bowl and mix with 2 tbsp olive oil, salt and parsley, set aside
  4. Take a frying pan, add 2 tbsp olive oil, garlic and cook until golden. Add your washed and dried mushrooms and cook for 5 to 7 mins.
  5. In the meantime, cook your potatoes in the microwave according to packaging directions (not like me… 😂)
  6. Cut your avocado at your convenience, 1 avocado per plate
  7. Assemble your beautiful and colorful plate, pour some lime juice and spices of your choice and enjoy! 🌈
