What I eat in a day as a vegan – Spring Edition


Hi guys!

As you can see, I came up today with a «What I eat in a day as a vegan» video. It’s all about fresh fruit and veggies, as spring is around the corner (at least here in Spain!). All the recipes are very quick and easy to make. They can also be prepared the night before and taken to work. All details are down below.

Breakfast – Oatmeal & Fruit

Oatmeal & Fruit

♡ You will need:

  • 1 cup of oats
  • 1 cup of almond milk
  • A teaspoon of cinnamon
  • 3-4 Strawberries, sliced
  • 1 Banana, sliced
  • A teaspoon of chia seeds
  1. Heat the oats and the milk in the microwave for 3 minutes until they soften, add the cinnamon and stir.
  2. Top your oatmeal with sliced fresh fuit and chia seeds for added protein and fiber.

Lunch – Salad bowl

What you need for this recipe is to combine all leftover, canned vegetables into a large bowl. Here I give you some suggestions and an super easy tomato sauce recipe:

♡ I used:

  • 1 roasted red bell pepper
  • 2 medium carrots, sliced
  • A handful of spinach
  • 1 avocado 
  • A can of sweet corn
  • A can of chickpeas
  • Fresh parsley

For the tomato sauce: Blend 3 pealed tomatoes along with a tablespoon of olive oil and a pinch of salt. You could add garlic to make it more spicy.

Dinner – Rice noodle Stir-Fry

Rice Noodle Stir-Fry

♡ You will need:

  • Rice Noodles
  • A handful of each: Asparagus, green beans, carrots (sliced), green peas
  • 1 tablespoon of coconut oil
  • 4 tablespoons of soy sauce
  • 1 tablespoon of garlic powder
  • 1 tomato, sliced
  • Fresh parsley
  1. Cook the rice noodles as indicated on the package
  2. In a wok pan, add some water and a tablespoon of coconut oil and cook vegetables at medium-high heat.
  3. Add the garlic powder and salt and pepper to taste
  4. Stir until they softened
  5. Add the noodles and the soy sauce to the pan and mix all the ingredients together until they are well coated.
  6. Serve the dish topped with the tomato and parsley


Dispose your sliced fruit leftovers into a bowl, add agave or maple syrup to taste.
